Uncooked Fondant


450g Icing Sugar

1 egg white, unbeaten

2 tablespoons liquid glucose


Sift the icing sugar and warm the glucose.

Combine 95% of the icing sugar with the glucose and gradually add to the egg white.

Knead until smooth. If the fondant is too soft add some more icing sugar.

Flavouring and colouring can be added at the kneading stage.

To store, wrap in plastic wrap and keep in an airtight container at room temperature.

This fondant must be eaten within 4 days of making.
